I know there are probably many versions of this around, but this is how I make it. If you're a fan of casseroles (like me) and you love chicken and cheese (oh baby!), you'll enjoy this recipe.
Here's what you'll need:
1 can of whole kernel corn (undrained) [$0.75]
2 cans of Campbell's Cheddar Cheese soup (or store brand, but I haven't found a store brand yet) [$3.00]
1 can of cream of chicken soup [$0.70]
1 box of stuffing mix (I use corn bread stuffing or chicken flavored) [$1.50]
4 cups of cooked rice (I cheat and use boil-in-bag rice and prepare 2 bags)* [$0.75]
1.5 pounds of chicken breast, diced and cooked [$3.50]
In a large bowl mix all of your ingredients except the stuffing. Stir it well and then spread it out in a large casserole dish (I use 6x12 one from Pampered Chef). Prepare your stuffing according to the box directions and then spread over the top of your casserole. Bake at 350º for 35-40 minutes.
It's super yummy and costs around $10 and feeds about 6-8 people, roughly.

Yeah yeah yeah. My dad said the same thing today. LOL I don't eat vegies though!
